Lactic acid fermentation is a microbial process in which sugars are converted into lactic acid by lactic acid bacteria (LAB) under anaerobic conditions. This fermentation pathway is utilized in various food preservation and fermentation techniques, particularly in the production of fermented dairy products, vegetables, and meats. During lactic acid fermentation, LAB, primarily species of Lactobacillus and Streptococcus, metabolize sugars present in foods, such as lactose in milk or glucose and fructose in vegetables, through glycolysis. This process involves the breakdown of sugars into pyruvate, which is then converted into lactic acid by the enzyme lactate dehydrogenase. The production of lactic acid lowers the pH of the food, creating an acidic environment that inhibits the growth of spoilage microorganisms and pathogens, thus preserving the food and extending its shelf life. Lactic acid fermentation is commonly used in the production of fermented dairy products such as yogurt, cheese, and kefir, where LAB cultures are added to milk to initiate fermentation. In vegetable fermentation, LAB naturally present on the surface of vegetables or added as starter cultures ferment sugars present in the vegetables, leading to the production of lactic acid and other metabolites that impart characteristic flavors and textures to fermented vegetables such as sauerkraut, kimchi, and pickles. Similarly, in meat fermentation, LAB play a crucial role in the production of fermented sausages and cured meats by converting sugars present in meat into lactic acid, lowering the pH, and contributing to flavor development and preservation. Lactic acid fermentation is also used in industrial processes for the production of lactic acid, which serves as a precursor for various food additives, biodegradable plastics, and pharmaceuticals. Additionally, lactic acid fermentation has been associated with numerous health benefits, including improved digestion, immune modulation, and protection against gastrointestinal infections. Fermented foods containing high levels of lactic acid bacteria are believed to promote gut health by modulating the composition and activity of the gut microbiota. Furthermore, lactic acid fermentation enhances the bioavailability of certain nutrients and phytochemicals in foods, contributing to their nutritional value and potential health benefits.
