Biography:
Dr. Randah M Alqurashi is a vice Dean of the College of Agriculture and Food Sciences and an Associate Professor in the Department of Food and Nutritional Sciences at King Faisal University (KFU). Dr. Alqurashi graduated from University of Reading UK in Human Nutrition and food sciences, and she had an MSc in Clinical Nutrition and Human Health from Glasgow Caledonian University in the UK. Dr. Alqurashi has obtained a patent from United States Patent and Trademark Office title of the invention "Encapsulated Polyphenolic Compound using Fruit Waste” and her work which includes over 20 scientific publications has made a major continuation to establishing the relevance of fruit and vegetables to the prevention of cardiometabolic diseases and dietary intake in food industry and Technology. Dr. Alqurashi specializes in designing and conducting clinical trials in the field of human nutrition in close collaboration with the food Technology.
