Biography:
Licet Durango Castilla is a Food Engineer and Master's candidate in Agri-Food Sciences at the University of Córdoba (Colombia). She has developed research in non-conventional winemaking, characterization of exotic tropical fruits and evaluation of fermentation processes. His experience includes the design of bioprocesses for obtaining unicellular protein and the study of agroindustrial matrices with functional potential. His approach integrates the sustainable use of local resources with innovation in food and tropical bioeconomy.
