Biography:
Diana Catalina Castro Rodriguez has completed her Masters and PhD in Bioprocess Sciences from the National Polytechnic Institute. She is currently a Researcher for Mexico, CONACYT, commissioned to the National Institute of Medical Sciences and Nutrition Salvador Zubirán in Mexico City where she develops the line of research focused on the biosynthesis, analysis, and characterization of functional foods, such as probiotics and prebiotics and their use in the prevention of chronic degenerative diseases. Member of the National System of Researchers level 1. Tutor of students at master's and doctoral level at IPN and UNAM. Guest lecturer at IPN, CINVESTAV, Universidad de Tlaxcala. She has two national and one international patent.
