Biography:

Emmanuel Kehinde OKE is a Lecturer in Department of Food Science, University of Medical Sciences, Ondo, Nigeria. He hold a Ph.D in Food Processing and Storage Technology with research specialization in Food Processing, Preservation and Product Development with focus on underutilized crops, food by-products valorization and upgrading of indigenous technologies characterization for improved nutrition. Dr. Oke had worked as a Demonstrator in the Department of Food Science and Technology, Federal University of Agriculture, Abeokuta (FUNAAB). He had also served as a Senior Research Associate with some National and International research projects such as West Africa Agricultural Productivity Programme (World Bank Sponsored) and TetFund Institution Based Research with Institute of Food Security, Environmental Resources and Agricultural Research, FUNAAB. He is a member of Nigeria Institute of Food Science and Technology. He has published over 56 Journal articles and 29 Conference Proceedings. He also serves as a reviewer to reputable journals. His hobbies include reading and meeting new people
