Vanessa Grifoll holds degrees in Chemistry and Biochemistry, with specialized Master’s degrees in Occupational Risk Prevention and Food Safety. After beginning her research career in nutrigenomics in 2007, she joined CTICH in 2012 as a health and nutrition researcher. Her work focuses on evaluating the health benefits of mushrooms and identifying bioactive fungal metabolites. These findings have key applications in the pharmaceutical, food, and cosmetic industries. Her extensive background bridges the gap between academic research and industrial innovation in functional nutrition.
