Biography:
Sylvie Assoi is a Food Science researcher and faculty member at Péléforo Gon Coulibaly University of Korhogo, Côte d’Ivoire. She earned her Ph.D. in Food Science from Alabama A&M University, USA. Her research centers on converting agricultural by-products and underexploited food resources into functional ingredients and nutritious food products. She collaborates with small-scale farmers and local producers in northern Côte d’Ivoire to implement circular-economy solutions, enhance value-addition, and strengthen food security and livelihoods.
