Biography:
ML Timon is a researcher in Food Science and Technology with a sustained academic career focused on both basic and applied research, as well as university teaching innovation. Her work addresses agro-food by-product valorization, natural bioactive compounds and antioxidants, emerging processing technologies, and the improvement of quality, safety, and shelf life in meat and plant-based foods. She has also developed a strong line of educational innovation, particularly in project-based learning and competency-based assessment. She has participated continuously in competitive R&D&I projects at regional, national, and European levels, contributing to food authentication, sustainable diets, healthy ageing, and circular economy approaches.
