Biography:

Dr. Grzegorz Pogorzelski is a researcher at the Institute of Animal Genetics and Biotechnology of the Polish Academy of Sciences and the International Meat Research 3G Foundation. His work focuses on functional food design, modern methods for assessing the quality of animal-derived foods, predicting beef quality, and processes affecting the technological and culinary quality of meat and animal fats. He has participated in numerous scientific and development projects, including: "Innovative functional food fats with enhanced nutritional, health-promoting, and technological value in a spray-on system and protective and convenient packaging.
