Biography:
Ana Isabel Nájera is Professor in the Food Technology Area at the University of the Basque Country EHU (Spain). Her research activity has been developed over more than 30 years in the field of Food Science and Technology and Food Quality and Safety. With extensive experience in physical-chemical, chromatographic (HPLC and GLC) and sensory analysis of food, highlighting the multidisciplinary nature of the studies. She is currently the responsible researcher for the line of work entitled Sustainable and circular preservation alternatives for the food industry.
