Biography:
Zied ZARAI has completed his PhD in 2011 from Sfax University and he is an Associate professor and the head of the department Food Technology, ISBS-Tunisia. He is a researcher in the laboratory of biochemistry and enzymatic engineering of lipases at the National School of Engineering of Sfax. Tunisia. He has published more than 40 papers in reputed journals and has been serving as an editorial board member of repute. He is a Academic coordinator of the Master Program and member of many international Association of Food. Early on, He was the coordinator of many national and international projects.
