Biography:
Dr. Espinosa is presently working as Post-Doctoral Researcher at Universidad Industrial de Santander, Colombia. Previously she worked as Doctoral Student at International Iberian Nanotechnology Laboratory in Portugal. She received her doctoral degree, thesis awarded with meritorious mention, in the year 2020 from Universidad del Valle, Colombia. Her research objective is to transform food by-products into functional foods that increase the quality of life and reduce environmental impact. She has published 6 articles in various international peer reviewed journals and has supported the advancement of food technology and nutrition in Colombia from the demarche of free International Schools of Advanced Training.
